I am tasked with cooking the turkey this year, since we got a bad-ass new oven

Well you guys that do the turkey I have done them for 20 years, the trick to keeping the turkey really moist is to soak the turkey for 24 hours in a mix of saltwater and sugar. You should mix about one cup salt, one cup sugar and then make sure the bird stays cold but not frozen so you can use ice in bags. Put the mix in a cooler with the bird in it and the salt water will soak into the bird. With the salt water in the bird it will cook about 20% faster but will retain most of it's moisture.

This will be the first year in 20 years that I have no plans to do anything for either Christmas or thanksgiving.

Max, I tried this using kosher salt and also adding a few bay leaves and some thyme and it was OUTSTANDING! I also cooked it in a convection oven and it was done in just under 3 hours without needing to bag it or tent it with foil, came out PERFECT! I am definitely using that tip, as my family said I am now in charge of cooking the bird every year.

Yes the salt does cause it to cook faster. Glad you like it, the secret came from my mother in law. I know a lot of people have problems with the mother in laws but mine was the best. When Jeannie and I first got married she lived with us for several years. I had it made, she could cook like you couldn't imagine and then to have a sexy wife just topped it off. I really hated when she got a place of her own. :rofl: But like my wife she passed away with cancer about 9 years ago now.
